Chef Sergio Jimenez's new dinner menu at Adelaide Del Mar is the most personal food I've seen him prepare, and the detail in every dish shows it.  The hamachi carpaccio comes with furikake seasoning, black garlic salt, truffle, and shoyu vinaigrette, tangerines, pickled red onions, and a mix of nasturtium, sunflower, and melon greens that give it so much flavor.
