Arnaud Palatan, the owner of Bloom Cafe, grew up in Montpellier, France. As a kid, Arnaud lived off of organic vegetables, free-range poultry and grass-fed beef of southern France. Since becoming an American restaurateur, he has focused on maintaining this healthy-sourcing philosophy.
