We've been seeing a lot of posts from elote places down in Chula Vista, but since we don't make it that far south too often, we thought we'd show some love to Elote in Escondido.  Basically, it's like a more authentic Mexican version of Chipotle, incorporating corn in everything.  We got the carne asada bowl and the adobada burrito, and they were so good! Of course they have actual elote on cob or in cup, too, but you can choose other options like baked potatoes, fries, tacos or quesadillas too.
