I learned it’s called cold pot because the fish is fully cooked in the kitchen and then served in a pot, where it’s left to cool; whereas in hotpot, the food is cooked at the table. I don’t have Sichuan food often but the numbing spice from the broth and peppercorns warms up my soul every time.
