It's a poor man's pasta perfected over time! The owner, Manny, ate a lot of pasta during his college days and continued to make pasta dishes, experimenting with spice levels and different seasonings throughout the various stages of his life. He learned to make some dishes more simple for his son, who was a picky eater and learned to "spice things up" and make some dishes more interesting for others in his life who enjoyed the extra additions.
