​@thegreenpigbistro (GPB) was opened in 2012 by Arlington native Scot Harlan. GPB is a fusion of French and American cuisine. Bistro does not mean small in this case, but more so a focus on the theme - in this case, the cooking theme- cooking from “head to tail,” all of an animal is used.

​I tried Veggie Stuffed waffle! It was stuffed with two eggs, broccoli, mushrooms, and cheddar cheese topped with avocado & sunny-side egg. Sweet and savory!!
