I put my hand upon a chip and I dip and dip and dip.  Because when Chef Geno Bahena offers for you try alllllllll the moles at @manchamantelesrestaurant you must.  Then decisions had to be made by myself, @richard.k.liu and his lovely wife @alisunlea .  Once it was “tamal” for us to order we had to split the salad de noche buena with beets, oranges, jicama, apples, peanuts and a citrus dressing and the Tamal de huitlacoche con mole amarillo from the winter specials.
