## About
Sometimes referred to as mazemen, mazesoba is a brothless ramen created by our own Chef Naoto Niiyama. Menya Hanabi's original recipe includes noodles developed in-house, a special sauce base, spicy minced pork, green onion, chives  garlic, and fish powder. All topped off with a poached egg. We serve it, you mix it together and enjoy.

If you’re a ‘dry ramen’ fanatic like me, it’s worth visiting this place for its variety. I usually get the curry or the mentaiko cream, depending on whether I’m in the mood for something spicy & savory or creamy, almost pasta-like. My bf likes the deluxe with chashu & egg, but my preference leans toward the flavors of the other two.

If you’re used to traditional waitstaff service, you won’t get it, but there’s some benefit in self-service with a QR code.

I’ve come here a couple times now & I love it so much! It’s such a unique concept of having a broth less ramen. It’s super flavorful & it’s perfect when you want ramen but the weather is too hot for soup!

Went to the newly opened Menya Hanabi in Irvine. This location sells mazesoba which is a broth less ramen. The mazesoba was really good and they also give a small side of rice at end of your meal to mix with the leftover sauce. The combination of sauce, rice, and vinegar makes a nice umami bomb.
