Cocktail pairings are available and they are also open for Late Bar nights for regulars on Friday nights. Chef Anthony and Ryotsro are great entertainers as well to make sure you enjoy a great time! Bar Sawa was perfection from beginning to end. It's not easy to find but once you're in, it's cozy and intimate, with only 8 people served at a single time. Much of the fish is dry aged and the techniques blend modern and traditional methods. The cocktail pairing is strong and a steal. The soy sauce Basque cheesecake at the end (not shown here) were also made in house by one of the sushi chefs. Once the doors opened into the restaurant, it felt like being transported into a truly Japanese experience. We did the omakase with drink pairing. All the sushi was fresh and delicately prepared. The sushi chefs were friendly and attentive. At the time we dined there, it was mackerel season, so there was a good portion of the pieces that were mackerel.
