I ordered three tacos al pastor with everything: onion, cilantro, and a touch of salsa roja. I also grabbed extra roja and salsa verde on the side.
 
Before diving in, I sampled the meat on its own. It had a savory, slightly bitter, earthy flavor. The texture was tender—not too greasy, not dry—nicely balanced.
No pineapple or sweetness was present in the meat.
 
The tacos in their entirety were fantastic!
