Malatang type restaurants are popping all over the OC area and this is a good place to dip your foot in for the first time. You enter inside the restaurant and grab a bowl and tongs and go through the buffet line grabbing whatever your heart desires. They charge by the weight so don't go too crazy. You will also choose your broth flavor. I personally love the bone broth at mild spice level.
