Formerly Chicago Mike’s, Billy Bricks Pizza & Ice Cream is a family owned authentic brick oven pizzeria & super premium ice cream shop. Serving Neapolitan & New Haven inspired pizza, pasta, sandwiches, salads, appetizers, gluten free & vegan options, ice cream and more the way they were meant to be. Established in 2005. Billy Bricks, first branded as Brix, opened in 2005 in Downtown Lombard, IL by founder Bill Wilson. Bill was inspired by his first taste of wood-fired brick oven pizza during a family vacation in California. He found himself longing for the crispy, chewy crust, the taste, and aroma that come only from a wood-fired oven. Chicagoland was nearly devoid of any brick oven pizzerias at the time. Bill knew that if he shared this type of pizza with others, they were sure to love it, too! After years of research and development with constant encouragement from his wife and sons, the Brix Wood Fired Pizza concept was born. Remaining family owned with his son Ric Gruber
